hi Susi,
check out ayumi, alex, my and others blog posts - we documented how we
winterize with cardboard lining and leaves on top. you can also look at
the bottom six which are filled.
Ayumi left a bucket with fermented soil, which contains a lot of
microbes that the worms like. you can mix in your scraps with that.
The top two shelves should be kept lighter as we noticed that the
structure was not able to hold super heavy containers on the top , so
don't feel like you need to fill it to the top. You can also for
experiment try your own way, leave it in bag or something else.
We had the group for support, but maybe someone agrees to come meet you.
